Tuscan Cuisine


Italian cuisine has evolved over many hundreds of years and can be traced right back to the 4th century BC. It changed greatly in the 15th century with the discovery of the New World when items such as potatoes, tomatoes, maize and peppers were introduced. Today, Italian food is extremely popular with its infamous choice of pastas, antipasti, and pizza through to the more traditional foods which vary from region to region; it is a major pull for many tourists travelling to Italy.
 

Tuscany, where the Borgo di Colleoli proudly stands is the heartland of Italy and the food of this rustic region not only reflects the very best of Italian cooking but also the superiority for simple, classic food. Tuscany enchants many with its seacoasts, mountains, rolling hills, grassy plains, quaint villages and vibrant cities.

In the coastal areas, vast quantities of seafood and fresh fish can be bought and tasted with many trying the famous Tuscan seafood soup, Cacciucco which changes from day to day depending on the catch of the day.
Tuscan meat is often grilled over open fires with one of the most celebrated dishes being a perfectly cooked T-bone steak, drizzled with olive oil and often topped with a peppery lettuce; Bistecca Fiorentina.

The rich, fertile soil of the grassy plains means that the vegetables grown in Tuscany are plentiful and full of flavour. Many vegetables are eaten raw or steamed and cooked with a little olive oil and garlic. Tuscan people carry the name “bean-eaters” for their love of beans especially the fava bean but also the cannellini or toscanelli bean.

Borgo di Colleoli which was built in 1494 by the Agostini family is now 500 years on, a unique holiday palace consisting of the main manor house or the Palazzo and a choice of self catering apartments which would have once housed farm animals, grain and machinery. The Palazzo has been converted into 12 unique suites all with luxury en-suite bathrooms and stunning views across rolling Tuscan countryside.

The resort offers a choice of two restaurants. The Enoteca wine bar, located in the original wine cellars of years gone by offers a superb choice of classic Italian wines and liquors and a relaxed dining experience. The I Seccoli restaurant has an award winning status and prides itself on a great selection of traditional Tuscan cuisine plus and extensive wine menu.
